Ciabatta Bread Recipe

Makes 4 loaves

Starter dough (the day before)

What you’ll need

  • 2 1/4 cups bread flour
  • 1 1/4 cups water
  • 1/4 tsp. yeast (dry)

What to do

  • In a large bowl or plastic container, combine flour and yeast, then add water.
  • Mix with spoon or hands until all dry ingredients are hydrated, it should have no dry spots and be somewhere between a dough and a batter.
  • Leave overnight, covered

Final dough

What you’ll need

  • 5 1/8 cups bread flour
  • 2 cups water
  • 1 tablespoon salt
  • 2 1/2 teaspoons yeast (dry)
  • Starter dough

What to do

(in same container)

  • put flour, salt, yeast on top of starter dough (which will now be nice and bubbly and fragrant)
  • combine these dry ingredients together so salt and yeast are distributed evenly throughout flour
  • add water, hottest you can get it out of the tap
  • mix everything together with your hands until there is no dry flour

big sticky mess

  • rest for 20 minutes covered
  • knead the dough - I left mine in the container and folded it on itself over and over again
  • rest for one hour, covered
  • fold dough - fold each of the 4 sides into the middle and flip the whole thing over so it is smaller and tighter
  • rest for one hour, covered
  • cut out rough pieces (you can use a bread knife - wetting it first helps, but I just used my hands- wet- to make pieces)
  • put pieces on baking sheet with tiny amount of olive oil to prevent sticking.
  • let rise for 15-20 minutes
  • bake at 450 for 20-25 minutes
  • check that top and bottom are evenly baking. after 10 minutes, I switched my baking sheets and moved the top sheet to the bottom and bottom sheet to the top. Watch the bottom of the breads so they don’t burn.

Herbed Batter Rolls

I'm sorry that I don't have a picture for this one, but it's on the menu for dinner tonight.
I'll let you know how it turns out!

Herbed Batter Rolls

1 tablespoon active dry yeast
1 cup warm water
1/2 teaspoon sage
1/2 teaspoon dried tarragon
1/8 teaspoon ground nutmeg
2 tablespoons white sugar
1 teaspoon salt
1 egg
2 tablespoons butter, cut into small pieces
2 1/4 cups all-purpose flour, divided
In a large mixing bowl dissolve yeast in warm water. Add the sage, tarragon, nutmeg, sugar, salt, egg, butter or margarine and 1 cup of the flour. Using a wire whisk, beat until smooth. Stir in remaining 1 1/4 cups flour with a wooden spoon and beat until smooth. Scrape batter from sides of the bowl, cover with a damp cloth and let rise in a warm place for about 30 minutes or until doubled in volume.
Deflate batter by Stirring with a wooden spoon. Lightly grease one 8 cup muffin pan. Scoop batter into the prepared muffin pan. Fill each cup slightly more than 1/2 full; set aside in a warm place and let rise for about 15 to 20 minutes or until doubled. Preheat oven to 400 degrees F (200 degrees C).
Bake in the preheated oven for 15 to 20 minutes or until golden. Serve warm.

If the rolls live up to my expectations,
these will be on the menu for
Christmas Day!

Warmest Wishes!

Christmas Tour

Welcome to our Christmas home tour! We hope you'll join us in a cup of mulled wine and linger a while before our fire. This afternoon we'll be baking bread for our holiday parties and you're invited to grab a rolling pin and join in the fun!

One of our more interesting packages! This is the handiwork my my precious husband.

A handmade wooden nativity placed inside a gourd. Purchased in Venezuela.

The dining room table is already set for tonight's party.

Poor Poppett is still worn out from last night's party!

This Christmas tree all aglow in the early morning firelight. Christmas music is playing softly throughout the house. Such a warm, comforting feeling!

The fire has been lit in the kitchen in anticipation of this afternoon's bread making.
Please join us!

CHRISTMAS SNOW!

I've been spending my restful hours making snowflakes for our Christmas tree and for those of family and friends. It looks like this may be the only snow we get this year. At Thanksgiving the lows were around 22. Yesterday our high temperature reading was 76 degrees, making it hard to get into the Christmas spirit.

I've been making homemade rolls for our parties and friends. Candy making should begin tomorrow if the weather stays dry. Our annual Christmas party is this weekend. My poor darling husband is doing most of the work again this year. I know he'll be glad when I am fully recovered!
